Cooking 4 Life: Healthy Raspberry Pops

It’s a problem for many families, what should you serve for dessert?  You want to serve something healthy, yet satisfying.  Something that your kids won’t turn their nose up to, but provides some great health benefits that they don’t always realize they’re having. There’s really a very simple answer to this problem, raspberry pops. Today’s recipe in our Cooking 4 Life series is sinfully simple, devilishly delish and can easily be grown in a garden.

Fruit, Freeze, Serve

Ok, so maybe it isn’t that simple, but all you really need are some raspberries, sugar and a little lemon juice.  By utilizing a food processor, you can easily puree roughly 20 ounces of raspberries (or blue berries, or strawberries, or any other sweet fruit concoction you can come up with), with about ¾ cup of water, a ½ cup of sugar with just a little lemon juice to taste (roughly 3 tablespoons).  From there, use a strainer and either use a popsicle mold or an ice cube tray (with toothpicks). 

From there, simply freeze until the popsicles become hard (roughly 3 hours).  If you are having trouble removing the popsicles from their containers, dip the bottoms of them into the mold.
