Cooking 4 Life: The Best Broccoli Soup Ever (Vegetarian)

Americans love meat.  We love to be outside and barbeque.  Why many men are drawn to a grill is beyond comprehension for most, maybe it’s the primeval fire that drags us near, the smell of the meat cooking, or just simply the camaraderie.  But what do you do when you want something healthy, or, gasp! Someone doesn’t eat meat? 

This recipe is one that I love, it’s incredibly simple (4 ingredients), no butter, no fat, you don’t even need cheese.  Many times, a soup is combined with cream, but that’s the quickest way to turn an otherwise healthy dish into a heart attack.  This recipe is so simple, and so delicious, you simply must try it.  For those with younger children, the bright green color of the soup is just fun. Best Broccoli Soup

All you need for this broccoli soup is 2 heads of broccoli (the fresher the better), a pot of boiling water, salt and pepper and a little olive oil.  All you need to do is cut the florets off the broccoli, put into rapidly-boiling salted water.  Once the broccoli is cooked (3-4 minutes), put the pieces into a blender.  Then fill the blender about ½ of the way with the water you cooked the broccoli in.  Blend ingredients (add water if needed).  The soup should be thick when you put a spoon into it.  Pour into bowl, and drizzle olive oil on top of the soup.
